Newly opened Sunny Day Bakery is focusing on scrolls

Scrolls are definitely one of the hottest items in the baking industry right now, and newly opened Melbourne bakery Sunny Day is helping to meet consumer demand.

The brains behind the bakery are Joe La and Brain Taing – who also operate the Asian-influenced viennoiserie Bloomwood as well as Sandwich Shop Sloppy Joe’s Deli, doughnut shop Joey’s Doughies and fried chicken pop-up Flappy Joe’s. Now Sunny Days has joined their line-up.

Located on Little Collins Street, Sunny Days opened its doors in early July, with Joe saying the decision to open the business was mainly centred around the consumer response to the traditional cinnamon scroll at Joey’s Doughies.

Speaking with Broadsheet, Joe said he had applied all the knowledge he had learned from making doughnuts to the scrolls.

“I’m not a chef or a baker. I’m self-taught and very experimental,” he said to the publication.

Most of the scrolls found at Sunny Days are a combination of a textural element and flavoured cream. Think pistachio cream and crushed nuts, or hazelnut and feuilletine. There are also savoury options that draw heavily on classic combinations like Vegemite and cheese, or a pizza option that combines pepperoni with hot honey and stracciatella.

Uniquely however, Joe said they drench the scrolls with cream just before they are baked, which results in a softer and more moist end product. They also won’t be limited to one bake per day. Instead the team will aim for small but regular.

“We’re aiming for regular bakes throughout the day… we want to serve each scroll as warm as possible,” he said.
