TikTok is at it again, teaching us things that we may not be ready to hear, but we definitely need to hear. This time, it’s about baking pans – and how the colour of your pans affects the way your goodies bake.

TikTok user @benjaminthebaker has recently gone viral for his hot takes about how the colour of baking pans affects how the things on them bake. Apparently, this is the case across the board, from cookies and cakes to brownies.

“Whether its cookies cakes or brownies, the type of pan you use has a big impact on how your desserts bake.” Benjamin says in his video.

If you’re making cookies, Benjamin says, use a light tray for a squishier texture – cookies baked on dark trays will have crispy edges and brown bottoms.

This appears to be the trend across baked goods. In his video, Benjamin gives us a taster of the science behind it. “For cakes, because the dark metal conducts heat more quickly, the bottom of the cake will be darker and the edges of the cake will set faster. This means you end up with a shorter cake with a more rounded top and a thick crust.”

Brownies, too, are subject to this rule of nature. If you want brownies with a crisp edge and a melty centre, use a dark pan, but if you’re looking for those melty, gooey brownies all the way across your pan – best stick to light.
