Former Versailles-based baker opens Amann Patisserie

Melbourne’s Carlton North has welcomed a new bakery, Amann Patisserie.

Co-owner Yohann Godec formerly worked at Maison Bigot – one of the largest boulangeries in Versailles, France. It was here, he told Broadsheet Melbourne, that he often had to compromise on quality to churn out croissants. However, this is rejected at Amann Patisserie. Rather Yohann spends nine hours rolling out a batch of approximately 150 pastries each day before the doors open.

Yohann runs Amann Patisserie with his partner Alizee Le Goff – who is also from France – however the duo met while working at Brisbane’s Le Caprice Patisserie.

Yohann and Alizee moved to Melbourne together on 2022, and in 2023 started out delivering online orders to the city’s western suburbs.

Amann Patisserie opened its doors in June, and is located in a former commercial kitchen.

Alizee told Broadsheet they hadn’t renovated the space at all before opening, and only installed a countertop.

“Our highest priority is delivering quality products and the pastry door concept ensures our efforts and passion are focused on our products,” she said.

With a firm focus on paying homage to their French roots, Amann Patisserie serves up plain croissants, lemon madeleines and pain au chocolat.

Yohann said these classic items all follow recipes he learned during his culinary training in Cuzon, France.

“It’s just tradition really, and it’s stuff that we can’t always find here. For our French friends, the madeleines are like going back to childhood,” Alizee added.

“Australians are very good at borrowing from other cultures and creating new things. It’s incredible to see, but we just wanted to create something that was authentically French.”

Amann Patisserie also features a rotating menu, a new tart and cake flavour each week. Crowd favourites have also been promoted to the permanent menu. These have included items like Biscoff brioche loaf and the maple bacon danish.
