Authentic Italian piadina rolls into town

Nonna’s Piada, a food truck cruising around Sydney founded by Simone Medri and Giuseppe Valetta, is everything we love about Authentic Italian piadina rolls cooking. It’s based on a traditional recipe by Medri’s 91-year-old Italian grandmother, lovingly made with fresh, simple ingredients to produce a flavoursome product.

Piada is all over Italy in restaurants and street vendors. It’s a dense flatbread that resembles a thinner naan with a flaky outside. It’s toasted on both sides and served with cured meats, cheeses and rocket.

Nonna’s Piada takes you on a trip around Italy with its flavour variations, depending on what the traditional flavours of that particular region are.

The Cesena is filled with stracchino (a young cow’s milk cheese), rocket and prosciutto. The Cesenatico is filled with salami and fontina, and the Cervia with spinach, mushrooms, pecorino and fresh chilli.

Medri and Valetta have a strong focus on making the Authentic Italian piadina roll the old-fashioned way, which means no sauces or additives – just good, traditional food.
