Sydney cult-favourite bakery Tokyo Lamington has made the journey to Melbourne. The beloved Asian-Australian fusion desserts were made available to Melburnians on 18 October earlier this week.

All of Tokyo Lamington’s adventurous Sydney flavours are available at the new Melbourne store, with customers getting a chance to try the new Arnott’s range that debuted this month. The new flavours pay homage to the iced vovo, mint slice, and lemon crisp biscuits.

Fan-favourite classics like the fairy bread, chocolate-raspberry, and yuzu meringue lamingtons can also be found at the new location in Carlton.

Tokyo Lamington aims to “take the humble lamington and elevate it from local bakery staple to something Australia should be proud of.”

The establishment has its roots in both Japan and Australia and also takes inspiration from around the globe. It began in 2019 as the brainchild of Min Chai (who used to be part of N2 Extreme Gelato) and Eddie Stewart (formerly of Black Star Pastry).

Although the initial dream was to take the classic Australian treat around the world, starting in Japan, COVID-19 put paid to that idea.

However, Eddie and Min have been able to continue their (slightly altered) mission to spread elevated lamingtons with this month’s expansion into Melbourne.

“Once [Victoria’s] borders opened, there were lots of people coming straight from the airport with their bags to try our lamingtons,” Eddie Stewart told GoodFood.

While Tokyo Lamington specialises in—you guessed it!—lamingtons, that’s not all they do. Their Melbourne menu offers a wide selection of delicious goodies including onigiri, pies, quiches, sausage rolls, and vegan cookies, along with excellent caffeinated beverages from Single O.

Customers can also purchase various pieces of Tokyo Lamington (Lam Lam) merchandise, including t-shirts, socks, stickers, and truly adorable pins.
