Proofing baskets: plastic VS rattan

For many years the baking industry only used rattan proofing baskets. In recent years, due to environmental factors and health and safety issues, Herbert Birnbaum in Germany has developed a range of plastic proofing baskets, distributed exclusively by LOYAL Bakeware in Australia.

Both styles of baskets need to be prepared before use. Many bakers swear by rattan proofing baskets, which just need to be “knocked” or “tapped” before storage, ready for the next use. Herbert Birnbaum’s plastic baskets are HACCP approved and dishwasher safe for easy cleaning. They are designed with over 80 “vents” which allow the dough skin to breathe during proofing, emulating rattan.

The dough releases easily from both rattan and plastic. At the end of the day, it comes down to personal preference. However, beware of cheap baskets on eBay etc., as these are often bamboo imitations which break easily.
