Iced Vanilla Butter Cake



125g butter, softened
2 tbs Queen Vanilla Bean Paste
1.25 cups castor sugar
3 large eggs
1 cup plain flour
½ cup self-raising flour
¼ tsp bicarbonate of soda
½ cup milk

Vanilla Icing

¾ cup icing sugar mixture
2 tsps Queen Vanilla Bean Paste
1 tbsp milk


1 Pre-heat oven to moderately slow (160°C). Grease deep 20cm-round cake pan; line base with baking paper.

2 Beat ingredients in medium bowl on low speed with electric mixer until just combined. Beat on medium speed until mixture is smooth and changes to a paler colour.

3 Pour mixture into prepared pan. Bake cake in preheated oven about 1 ¼ hours. Stand cake five minutes, then turn onto wire rack; turn cake top-side up to cool. Drizzle with vanilla icing.

4 Vanilla icing: Combine all ingredients in a small bowl, mixing well.
