Following the success of Publique Bakery’s first shopfront at Melbourne’s Preston Market, owner and chef Sunghoon Kim has opened a second bricks-and-mortar location.
The newest store, located opposite the Queen Victoria Market, opened its doors in early January to great excitement.
According to Broadsheet SunghoonΒ began his career at specialty sourdough spot, Natural Tucker, back in 2005. This skill has been carried forward into Publique Bakery, which has earned itself a reputation for it sourdough loaves and sourdough croissants.
All items are made onsite, with favourites including danishes with fresh fruit, garlic croissants, Portuguese tarts and even a pain de ruban – a laminated pastry filled with almond cream that has been topped with a raspberry finish before being folded to resemble Minnie Mouse’s bow.
Although Sunghoon occasionally draws on his Korean heritage for inspiration for products, he is adamant Publique will remain a traditional boulangerie.
“I don’t want to go to trendy,” he said to Broadsheet.
Work on a third Publique location is currently underway, with the doors expected to open sometime this month.
