Many a baby’s birth has been celebrated with this dessert, karawiyah, which is a caraway pudding with nuts and grated coconut. The pudding, made with caraway seed and served with a layer of nuts and grated coconut, is served at baby showers.
Serves 4
WHAT YOU NEED
100g of white rice
800ml of water
50g of sugar
2 tbsp ground cumin
1 tbsp ground cinnamon
To serve
Grated coconut
Pine nuts
Pistachios
WHAT TO DO
Mix the rice with the sugar, ground caraway, and cinnamon. Add the water and cook on medium heat for 15 mins. Keep stirring so that the rice doesn’t stick on the bottom of the pan.
Turn the heat to low as soon as the rice starts to bubble. Continue cooking for another 5 mins, stirring constantly. The rice should be completely cooked.
Cool for 30 mins and purée it in the food processor or blender for 1 min. It should be smooth and creamy.
Divide the rice into four glasses or bowls and cool completely. Refrigerate for at least 1 hr, until firm.
Finish with a sprinkled layer of grated coconut and nuts.
