Pastry Chefs and industry experts from around Australia gathered at Sydney’s Star Casino in October for an afternoon of European desserts, pastry techniques and chocolate creations.
Frutex Australia hosted the event, which featured innovations and trends within the specialty-baking sector.
Unifines head chef David Austraete – assisted by Le Cordon Bleu student Marisol Contreas – created six elaborate constructions featuring Belnap, Decorgel, Compound Flavourings, Fonds and Chocolate Decorations products.
Dawn Food Products business development manager for Asia Pacific Ashley Gurney informed guests of Unifines new direction under Dawn branding and noted everyone was impressed by David’s creations.
“David produced very intricate works that showed how versatile some of the bakery applications can be, in particular the blending of glazes with GlamourGel to provide a shimmer effect,” Ashley said.
Team Pastry Australia, of whom Frutex are a sponsor, also impressed those in attendence with their detailed chocolate constructions.
