Former Lune baker Sam Iversen has opened his own bakery – named Bobby’s Bakery – that is nestled in the heart of North Melbourne.

The dream of opening a bakery started with humble beginnings; it was in a small shed in his mum’s backyard that Sam began his baking journey.

“I’ve wanted to open my own bakery since I was a first-year apprentice at Brickfields Bakery,” Sam said.

“I started there as a kitchen hand and eventually worked my way into the bakery. It means so much to have my own place now where I can put out my own product and pass on my knowledge to my wonderful staff!”

Sam’s journey took him through a variety of renowned bakeries, including Lune, Brickfields, Bourke Street Bakery in Sydney, Wild Life Bakery, and Antara in Melbourne. Throughout this time, his love for baking only grew, and by the end of 2024, he decided to invest in his dream. After saving for a house, Sam chose to back his own business instead. With a year-long renovation of a former mechanic’s garage, Bobby’s Bakery was born.

Behind the bakery’s roller door, Sam’s team crafts an array of unfussy, high-quality baked goods. The offerings range from rye sourdough and triple-chocolate cookies to croissants and baguettes made using the French-style poolish method. Despite this impressive variety, it’s the traditional Cornish pasty that stands out as the bakery’s signature item.

“Sourdough, Viennoiserie, and French-style poolish baguettes all feature, but our traditional Cornish Pasties are our unique product,” Sam said.

“I grew up in England with my mum’s side of the family being Cornish, and I wanted to recreate them here in Melbourne because I could never find a proper pasty anywhere!”

Bobby’s Bakery has quickly earned a loyal following.

“We have quite a few regulars already, and I love catching up with them when they come in,” Sam said.

“People really seem to appreciate the simple and transparent approach. It’s very much an open bakery, giving the public the chance to watch us making everything from scratch.”

With the warmth of a family business and a commitment to traditional baking, Bobby’s Bakery is making a name for itself in North Melbourne and beyond.
