Sydney-based bakery Loulou has officially become a an older sibling after Petit Loulou opened its doors in Sydney’s Martin Place.
Loulou rose to popularity and is known for being a French one-stop-shop in Milsons Point in the city’s north, being a bistro, boulangerie and traiteur.
Petit Loulou will be a kiosk focusing on baked goods within Martin Place’s Metro station.
Group bakery Brendon Woodward told Broadsheet they were pretty excited to have another Loulou.
“…especially in the spot it’s going,” he said.
“The Metro’s been a pretty big development for Sydney, and right in the heart of Sydney is a pretty good spot for it,” he said.
The product range will be baked in North Sydney before being delivered to the inner-city store twice daily. Expect fruit-topped tarts, palmiers, eclairs and pains au chocolat as well as the Martin Place exclusive: a cylindrical chocolate and macadamia croissant.
Brendon said the bestselling signature croissants will also be available.
“For us, the key is we have a long fermentation. I know everyone bangs on about how they use a three-, four-, five-day process for it. But we ferment the dough overnight before we laminate it. Once it’s laminated and rolled, it’s got another night of fermentation,” Brendon said.
“That’s pretty key to build the flavour in there, and we use a really premium butter.”
