New bakery-café, Suburbia has opened in Fairfield, Melbourne, offering a selection of freshly baked goods and an inviting atmosphere.
This new venture, launched by the team behind Seven Seeds, focuses on creating exceptional pastries and baked items such as croissants, sourdough, and coffee scrolls. These scrolls, in particular, stand out for their rich espresso flavour, providing a unique experience for coffee lovers.
The bakery serves as an extension of Seven Seeds’ established café and roastery operations, including the Carlton venue and sibling cafés Brother Baba Budan and Traveller.
The space was designed with a semi-open kitchen, giving visitors a chance to watch pastry chef Ellen Blackman and head baker Karl Alber work on everything from laminated doughs to sourdough loaves. Their experience at top establishments like Falco, Cobb Lane, and Mile End Bagels ensures a high level of craftsmanship.
In addition to their well-known pastries, Suburbia offers a small but satisfying menu featuring seasonal salads, fresh rolls, and toasted sandwiches. A special French toast dish with vanilla custard and fig-Earl Grey jam adds a touch of indulgence to the offerings. Hot cross buns and whole loaves will soon be available for take-away as well.
Suburbia’s location, just a short walk from the Seven Seeds roastery, allows them to offer not only their signature baked goods but also coffee, smoothies, and milkshakes.
“People used to come in to get coffee and hoped to order a latte at the same time, which we couldn’t [make there],” Co-founder Bridget Amor shared with Broadsheet.
At Suburbia, they can enjoy the best of both worlds: excellent coffee and pastries under one roof.
Bridget said she envisions Suburbia as a neighbourhood bakery, a place where local residents can enjoy great food in a welcoming environment. It’s clear that the bakery’s focus is on high-quality ingredients and providing a simple yet satisfying experience for its visitors.
