Later this month, Queen Amann Bakery will open its doors in Bowen Hills, Brisbane.
The project is led by industry veterans Larry Lim, a seasoned operator in the specialty coffee and hospitality sector, alongside Ania Kutek and Eddy Tice, the duo behind the well-regarded NYC Bagel Deli.
“Knowing that the King Street community has been eager for a new bakery makes us even more thrilled to be opening Queen Amann,” Larry told Broadsheet.
“We’re excited to bring our passion for quality baked goods to the neighbourhood, including our signature kouign-amann—which is, as we like to say, flaky, buttery, and a little full of itself.”
The kouign-amann (pronounced “queen-a-mahn”), which translates to “butter cake” in Breton will be the core offering at the bakery.
Often compared to the croissant due to its laminated dough, the kouign-amann differentiates itself through a denser, sweeter profile and a caramelised crust, achieved by layering the dough with both butter and sugar. This creates a pastry that is simultaneously flaky, sticky, and indulgently rich.
In addition to its hero product, the bakery will offer a supporting range of artisanal pastries, sourdough breads, focaccia, and rustic-style sandwiches, along with a beverage program centred on high-quality coffee and freshly squeezed juices.
The bakery has already started to promote the opening garnering attention on social media via their Instagram posts filled with encouraging comments like “Can’t wait!” and “I’ll take a dozen please!” in response to a kouign-amann image.
