Brisbane’s Brooki Bakehouse has revealed plans for a new flagship store in the city that will be its largest location yet.

The new store, which will be located in Fish Lane in South Brisbane, is set to open its doors in May 2026. Brooki Bakehouse founder Brooke Bellamy told The Courier Mail that the decision had been driven by overwhelming demand from customers across the city.

“South Brisbane kept coming out on top every single time,” she said.

“This flagship is our love letter to South Brisbane before we take everything we’ve learned and bring it to the rest of the country.”

According to The Courier Mail the newest store will introduce a theatre-style kitchen that will allow customers to watch on as the cookies are made, in addition to in-store dining for the first time.

The newest Brooki Bakehouse store marks the first step in expansion plans for the brand, which will see 10 Brooki Bakehouse stores open nationally in 2026, and 100 stores around the globe by the end of 2028.

The announcement also comes hot on the heels of Brooki Bakehouse appointing new chief executive officer Andrew Head.

It was announced in early March that Andrew would be stepping into the CEO position, and he would be overseeing the execution of the company’s growth strategy, enhance operational excellence, build leadership depth across the organisation, and ensure sustainable, profitable expansion across all markets.

“The opportunity now is to build the operational engine that that supports scale – ensuring we expand in a disciplined way, strengthen performance and maintain the premium positioning our customers expect as we grow,” Andrew said.
