Viral bakery Pippa’s Pantry has unveiled its first bricks-and-mortar store.

Located in Camp Hill, in the city’s south-east, the pink-hued bakery will have cakes, croissants and cookies on offer – all vegan.

The brainchild of Pippa Blatch, Pippa’s Pantry began as a social media story back in 2017, when Pippa first began sharing her baking creations on Instagram.

“…because I was vegan I was hashtagging – vegan baking, vegan this, vegan that,” Pippa told In Daily Qld.

“It really got picked up by the algorithm.”

Soon after Pippa was approached to set up a stall at a vegan market on the Sunshine Coast, north of Brisbane. She took 500 cupcakes with her – the result of two days of work – and she sold out in one hour and 50 minutes.

“The market was on Sunday. I went to work on the Monday and said I was going part time. Within two weeks I was doing Pippa’s Pantry full-time,” Pippa said.

A carefully crafted schedule of markets, pop-up appearances and corporate catering gigs and custom cake orders saw Pippa build her online following. However, the irregular schedule eventually made it difficult to organise custom cake collections, so Pippa decided to set up shop permanently.

“Working from a rental kitchen, then my home kitchen and then the pop-ups, it was always a matter of juggling where I will be on any given day for cake pick ups,” Pippa said.

“This ship is just so easy and makes more sense. I’ve always wanted to do all these things, but I’ve never been allowed to.”

Now, Pippa said she is looking forward to expanding her strictly vegan menu, all while keeping an eye on emerging trends.

“I really try to jump on things that I think are cool or I want to try and make cool,” Pippa said.

“I’m going to make what people want to buy. I love adapting because it’s just me and I don’t have staff. Pippa’s Pantry is an umbrella – I can do dog treats if I want!”
