Banksia Bakehouse strikes up sweet collaboration

The month of May is all about honey at Sydney’s Banksia Bakehouse with the team of pastry chefs and cake specialists striking up a sweet collaboration with local producer Amber Drop Honey, creating an array of special baked goods to pay homage to and create awareness of local honey, and to celebrate World Bee Day on May 20.

Located on the NSW Mid North Coast, Amber Drop honey specialises in harvesting small batch honey from hives rescued from inconvenient spaces like people’s yards, houses, farms, schools and businesses. And five per cent of their honey sales is donated to Save the Bees Australia to fund bee-friendly projects and help them contribute to a better future for bees and beekeepers in Australia.

“We’re thrilled to be helping shine the light on Amber Drop Honey, its wonderful product and commitment to sustainability,” says Chris Sheldrick.

“We’re on a mission to partner with local businesses, especially when they share the same ethos as us in terms of their provenance and the quality of the produce they create. Amber Drop Honey is certainly a great example of this.”

Amber Drop’s raw honey is antibacterial, antifungal and good for our guts—and it will be the special ingredient for four lovingly created Banksia Bakehouse pastries and cakes during May. These include:

Winnie’s Croissant ($12): a cube-shaped croissant filled with mascarpone cream, Amber Drop Honey jelly, and decorated with mascarpone cream, honeycomb and fresh figs.

Honey pear tart ($10): a vanilla tart shell filled with a light pear mousse sitting atop honey pear and almond cream, with honeycomb and macadamia nut surrounds.

The Mini Hive ($12): a lavish mini cake that combines honey caramel, vanilla sponge, and Italian buttercream, surrounded by and topped with cream cheese frosting, honeycomb and a honeycomb macaron.

The Bee Hive ($70): a beautiful cake with layers of vanilla sponge, honey cream, honeycomb, white chocolate ganache, and condensed milk cream, topped with honeycomb and icing flowers.

Banksia Bakehouse’s special honey creations will be available during May from Monday to Saturday at Banksia Bakehouse.
