Brisbane-based Sprout Artisan Bakery owners Lutz Richter and Rebecca Foley have operated under the business mantra of slow and steady. Now they’re taking the bakery to the next step with the announcement they will be opening a new production facility and retail space in the coming months.

The new space will be in the Craft’d Grounds in the inner-city suburb of Albion. Work is already underway to transform a street-facing portion of the former Seven Miles Coffee Roasters space into a cutting edge facility.

Speaking with InDailyQld, Rebecca said they planned to take it up a notch.

” He [Craft’d Grounds founder James Rennell] came to us and said, ‘I would love to see Sprout here. would you consider it?’,” Rebecca said.

“He just had a lot of belief in our business.

“A lot of customers have asked us to come north and open a shop. It’s something that they’ve wanted, but we just didn’t know how to make it work.”

The new space will provide customers with a sneak peek into the work undertaken back-of-house, with the ovens able to be seen from the street and a viewing window from the retail platform. through here the lamination and bread baking will be able to be viewed.

Rebecca said the overall aesthetic would be clean, organised and minimal.

“… but it will have an approachable, simple aesthetic,” she said.

“You can’t really scale artisan baked goods unless you have the right systems and it’s done intentionally.

“I think this will allow us to grow.”

Sprout Artisan Bakery first hit the Brisbane baking scene back in 2014, where it operated out of the Food Connect kitchen before moving to the markets and then eventually setting up its first permanent shop front on James Street in 2021.
