Market favourite Jane Scrolls is opening a permanent storefront in October

Voted QLD’s best by floods of social media comments, Jane Scrolls has been a consistent market favourite in Brisbane since August last year.

Popping up across eight different Brisbane markets following their success at Milton Markets, these cinnamon scrolls have been flying off the stall shelves consistently for over a year.

In an interview with InDaily, owners Hamish Pearce and Rebecca Ferguson unpacked their business’ growing popularity.

“Initially, we were doing 1500 scrolls by ourselves and that was just across two markets. This winter we were doing about 3000 scrolls per weekend,” Hamish explained.

But now, with their first permanent shopfront opening in early October, that number is only going to grow. Located in Coorparoo, Jane Scrolls will feature two self-serve coffee taps brewing Single O, barista-made coffees, hand-whisked matcha, and a rotating line of speciality drinks, alongside their famous scrolls.

This location will become their new production hub, so you can expect the same delicious flavours but with an even faster output. Their tried-and-true cinnamon swirl, Kinder Bueno (AKA ‘The Billionaire’), Pecan Sticky Date, and Vegemite scrolls will be the first on the shelves. But you might find some new favourites with speciality scrolls acting as rotating specials.

“We’re obviously going to launch with our scrolls – we’ve been doing it for a year now and even though we’re constantly trying to perfect the product, I think we’re pretty good at them,” Hamish said.

The Jane Scrolls kitchen has also been equipped with a pastry laminator, and Hamish said there are plans to add pastries to their line-up in time.

“I love learning the intricate details about absolutely everything and if I’m not the best at something, it irks me,” Hamish said.

“But I want to slowly learn how to do stuff. We’re going to recipe test it, launch it in small batches and get feedback.”

As the Coorparoo store grows, Hamish said they hope to include more bites including house-baked focaccia sandwiches with fillings like bacon and egg, chicken & onion, and a vegetarian feta-avocado.

The store will have café seating areas so guests can drool over the scroll displays and grab themselves a cuppa at the coffee taps. Since the scrolls will be baked on-site, for the first time customers can try the scrolls straight out of the oven, something impossible to deliver at their usual markets.
