A Manly bakery rolled out the big guns with a brand new pie-croissant hybrid creation, which came out just in time for Father’s Day.
Rollers Bakehouse is no stranger to some pastry experimentation, and this melding of a traditional meat pie with layers of flaky croissant pastry just works, and makes you wonder how it was’t already a thing.
The Rialto Lane bakery has an ever-changing menu of sweet and savoury creations baked fresh in-house daily, including a ‘Birthday Cake Twice Bake’ croissant featuring the Roller’s signature plain croissant filled with vanilla birthday cake frangipane, milk jam, vanilla creme patissiere, and a piece of birthday cake, topped with vanilla frosting, birthday crumb, chunks of birthday cake, more vanilla creme patissiere, and a rainbow white chocolate shard. Unfortunately, this was a limited offering for the bakery’s second birthday in July.
Other sweets on offer are a fancy Kouign-Amann, a coconut, Yuzu and strawberry twice baked croissant (filled with coconut frangipane, yuzu white chocolate Crème patisserie and stewed lemon strawberries. Topped with shards of coconut, vanilla mascarpone, more yuzu Crème patisserie, yuzu choc shards and strawberry gel) and an apple pie cruffin.
For the more savoury-inclined there is the Jamon Serrano Prosciutto, manchego, sage and honey croissant, or the confit garlic, herb and parmesan knot.
