Dear Florence heralds a new direction in culinary innovation

Earlier this month Sydney welcomed the opening of Prefecture 48, an innovative six-in-one, three-storey venue dedicated exclusively to Japanese cuisine.

The venue features four restaurants and a whisky bar as well as a patisserie – Dear Florence.

Leading the culinary charge at Dear Florence is award-winning pastry chef Aoife Noonan, who brings with her Michelin-star cred thanks to her four-year tenure as head pastry chef at Dublin’s two Michelin-starred restaurant Patrick Guilbaud. Aoife held various other executive roles throughout the city, and  now brings a wealth of experience to her new position. Her culinary journey has also taken her to Japan, where she honed techniques that will influence her creations at the patisserie.

Aoife is set to craft a menu of refined desserts that merge European influences with Japanese artistry. Seasonal creations and meticulously designed cakes will highlight her passion and precision.

Dear Florence is located on the ground floor of Prefecture 48 and is named for the daughter of the precinct’s founder.
