Brisbane-based baker and cookbook author Brooke Bellamy has announced the location of her first international store.

Hot on the heels of the release of her cookbook, Bake with Brooki, as well as her second store located at Brisbane’s Domestic Airport, Brooke said she would be jetting off to Abu Dhabi where a pop-up store would play a part in the month-long Mother of the Nation (MOTN) festival.

The MOTN festival is an annual family festival that’s held along The Corniche in the city’s east.

Brooke said the Brooki Bake House brand had received a lot of support from the Middle East, and talks were even underway about franchising opportunities.

“It’s all pretty nuts, but with such an incredible team, everything feels really doable. I just need to step in to solve problems,” Brooke said to The Courier Mail.

Brooke said she, her husband and their new baby, along with her mother would be flying to Abu Dhabi for the pop-up store’s opening.

Brooke also told the newspaper that they were in the process of finding a location for the next permanent Brooki Bake House store, and they were hopeful of staying on at the Domestic Airport after their pop-up period finishes in February 2025.
