Banksia Bakehouse’s is out to brighten winter with its vibrant pink and green special June creation—Pistachio Strawberry—which brings a welcome burst of colour and nutty goodness to winter days.

“With its brilliant pink and green, our Pistachio Strawberry is a fun and delicious cake that adds colour to winter!” says Banksia Bakehouse co-founder Aileen Zhang. “The cake’s fresh, tangy strawberry coulis is beautifully balanced by the nutty flavour of the pistachio sponge and the soft creaminess of the mascarpone.”

The Pistachio Strawberry ($15) has a pistachio sponge with a centre of mascarpone and strawberry coulis and a topping of fresh strawberry slices.

Other June special creations by the Banksia Bakehouse team include:

• Caramel Pear and Crumble croissant, which is filled with gold chocolate mousse and caramel pear jam and topped with gold chocolate mousse and spiced crumble ($12);
• Winter Breeze, which has vanilla mousse and grapefruit, pear and verbena filling, vanilla bean chocolate glaze and sable base ($10);
• Orange Almond, which has caramel chocolate ganache layered with orange marmalade and caramel cream on an almond praline sponge and a milk chocolate crushed almond coat, caramel cream and caramelised almonds ($10).

A little about pistachios 

Pistachios are a rich source of protein, iron, zinc, dietary fibre, folate, calcium and vitamins B6, E and K. The pistachio is one of the oldest flowering nut trees, belongs to the same tree family as the cashew, mango and sumac and its vibrant green comes from chlorophyll, which is why some people call them ‘the green almond’.

Banksia Bakehouse’s June specials are available Monday to Friday 7.30am to 4.30pm and Saturdays 8am to 2pm at Grosvenor Place piazza, 225 George Street, Sydney.
