Team Australia takes on the world in Milan

Three Australian pastry chefs and their coach flew to Milan in October to compete in the World Trophy of Pastry, Ice Cream and Chocolate.

Frankie Ferrante, Georgia Clisdell and Lucy Powell along with team coach Luigi Stivaletta made up Team Australia, the first team from Oz to compete in the competition.

Euroquip sponsored the team, and chose the William Angliss Institute to source their team.

“[Euroquip] came to our college and they said they wanted a team of three to represent the country,” said Georgia. “So we went through application after application until three of us got chosen.”

The team was the youngest in the competition as well as the team with the furthest to travel. They needed to produce a chocolate and praline sculpture, a sugar sculpture and modern cake, and a pastillage sugar sculpture and single ice cream portion, all around the theme The Discovery of Chocolate and Coffee.

Georgia was responsible for the pastillage sculpture and ice cream (she made a coffee gelato that judges deemed the second-best in the competition).

“For the theme we said that Sydney is the heart of coffee and chocolate so we designed the pastillage sculpture to include Centerpoint Tower [now the Sydney Tower Eye], The Harbour Bridge and the Opera House.”

Georgia said the day was intense.

“I had one of the chefs come and pick up one of my pieces and smell it.”

The team was able to bring the bones of their sculptures to the competition already made, and assemble them on the day. The 24-hour journey was a nervous trip as they hoped none of the pieces broke—they didn’t.

Teams had an hour-and-a-half preparation time the day before the competition and seven-and-a-half hours to complete their showpieces on the day.

“Our sugar piece shattered 10 minutes before the presentation,” said Georgia. “The showpiece was about the fires in the Daintree Rainforest, because the Daintree is where the cocoa beans are grown.”

The team scrambled to put the piece back together in time.

“I was thankful we put something up. So many teams had been training for months and they didn’t put something up for each component.”
