EOI Recipe
These sweet breakfast tarts from EOI are a delicious and easy way to start the day. Full of fresh goodness, they are a fantastic snack.
WHAT YOU NEED
For the pastry shell
GROUP 1
1,000g sugar
2,000g EOI Gilt, EOI Pride, or EOI Shortex
1,500g bakers flour
GROUP 2
300ml water
GROUP 3
1,500g sponge flour
25g baking powder
For the filling
70ml natural Greek yoghurt
30g cereal (muesli, etc.)
70g fresh fruit

- Be creative with your fillings and topping.
- Glaze the fruit for best finishing, keeping, and quality.
WHAT TO DO
For the pastry shell
Use a dough hook on low speed to mix GROUP 1 together to form a smooth paste.
Add GROUP 2 to GROUP 1 and mix well until clear, smooth, and soft
Add GROUP 3 to GROUPS 1 and 2, mix until a thoroughly clear, smooth dough is formed.
Baking
190°C, variable baking times will be required depending on thickness of dough and size of individual units.
Make up procedure
Place into 100mm pie foils or tins. Blind bake shells and allow cooling before adding the filling.
For the filling
Place the yoghurt in first, followed by your cereal, and then your choice of fresh fruit.
