There’s no denying LoDe has successfully forged a name for itself in Sydney, with the doors to its third location recently opening in Rozelle.

The brainchild of Federico Zanallato, who opened the first two locations with former owners Benji Spencer and Lorenzo Librini, the third iteration of the bakery promises to expand on LoDe’s already formidable reputation.

The new daytime 60-seater will see a traditional cafe menu be added to the baked goods range, which will feature the pies that helped LoDe earn its name, in addition to sweet and savoury pastries.

Speaking with Urban List Federico said the decision to open shop in Rozelle had been based on it strong local community and growing demand for specialty bakeries.

“Expanding here felt like a natural next step for the brand,” he said.

“The design follows LoDe’s existing identity – simple, warm and functional, without unnecessary distraction.”

Featuring a simple interior design, the inner workings of the bakery have been put on show through a glass-walled prep station located in the centre of the space.

Federico said this would allow customers to see the work that went into each of their creations.

“All our pastries are made from scratch daily, using multi-day techniques behind the scenes,” he said.

“There’s a lot more technical preparation and time involved than most people realise.

“Our signature [item] remains the Lode Pie, a combination of classic French pastry techniques with thoughtful, elevated fillings.”
