Iconic Melbourne bakery Baker Bleu has announced it will open a second Sydney store before the end of the year.

The newest store will be in the popular beach-side suburb of Bondi, with a third store on the city’s north-side slated to be added to the line-up next year.

Launched in Melbourne in 2016 by Mike and Mia Russell, the duo brought the Baker Bleu brand north to Sydney in 2022 with their first store at Double Bay.

Speaking with Good Food, Mike said customers had been asking them for details about their next location within the Harbour City.

“We’ve taken the old site of Le Paris Go Cafe site on Hall Street near [cafe and bookstore] Gertrude & Alice,” Mike said.

The newest store will replicate the successful grab-and-go formula already in place at the South Yarra storefront in Melbourne. The majority of bread used will be baked onsite at Double Bay, however all the sandwiches will be made at the Bondi store.

Mike added they were looking “100 per cent in the inner west” for the third store, which is slated to open in the first half of 2027.

He also said it was important to both him and Mia that each store had its own identity centred around their local consumer base. For example, the Bondi store will sell soft serve ice cream; a concept that has already been successfully trialled at Yarra.

“We do a seasonal panettone flavour, and one with dehydrated croissant crumb and olive oil,” Mike said.
