A notable buzz has surrounded Kudo Bakery since it first opened its doors on Melbourne’s Little Collins Street in July 2022.
The brainchild of former Sunda pastry chef Felix Goodwin and his partner Elena Nguyen, Kudo Bakery was the pint-sized gluten-free bakery – that was part of Hotel Windsor – and became renowned for their sourdough and canelΓ©s. Now, Felix and Elenaare ready to open the doors to their second bakery, Itera, in Brunswick.
Located in the former Hard Yakka factory, the full service bakery is the culmination of years of hard work.
Speaking with Broadsheet Felix said they had realised pretty early on that the 80sqm Kudo Bakery just wasn’t big enough for the offering they wanted to produce.
“People ask why we don’t do croissants. We just didn’t have the time and space to dedicate to that type of attention to trial and error in the city,” he said.
With the additional space, Itera will be home to a full dine-in gluten-free cafe menu as well as the bread and sweet treats from Kudo. If that wasn’t enough, the menu has been built around the rotating menu of bread loaves – five sourdoughs, a wholemeal option, and a fruit-studded or seeded rye option.
“We want people to have the opportunity to try our breads without buying a full loaf,” Felix said.
On the sweet front, there will be eight rotating canelΓ© flavours, from vanilla and oaked rum, to jasmine tea with peach ganache and fresh raspberry, or a pandan and taro option that is based on a cake Elena’s grandmother used to make.
The name, Itera, comes from the word iterate, and Felix and Elena said it represented the process of constantly refining their recipes.
“It speaks to the process behind this place and the idea that there’s always something to learn, refine and make better,” the duo shared on Instagram.
Itera’s doors will open on September 12.
