Coburg in Melbourne has recently become home to father–son Palestinian bakery Knafeh Nabulseyeh. The new bakery specialises in its namesake, knafeh, an Arabian classic that is made by layering shredded pastry with cheese, a sweet delicacy that isn’t too common around the country.
“It’s a dish that deserves to be on the menu in Australia,” Knafeh Nabulseyeh owner Mousa Khayat told Broadsheet.
Mousa owns the bakery with his son Amir, and the pair has put Knafeh Nabulseyeh together in a way that pays tribute to their hometown in Palestine—Nablus. Palestinian music plays throughout the store, and a large greyscale photo of the Nablus street where Mousa and Amir went to train in knafeh making hangs on the wall.
This new bakery in Coburg is a relocation of the successful Hughesdale store that Mousa first opened after he taught himself how to make knafeh and experienced success selling it in his local community.
Although it is known for its knafeh, the bakery serves other classic dishes such as baklava, maamoul, and osh el bulbul.
Something that Mousa and Amir are proud of is that Knafeh Nabulseyeh gives them the opportunity to share their heritage and traditions with Melbourne.
“That makes [us] really happy more than anything,” said Mousa.
