John Demetrios announces opening of Butter Days Bakery

With a wealth of experience behind him – and a MasterChef Australia Dessert Masters win – pastry chef John Demetrios has announced his next move – Butter Days Bakery.

The Malvern-based bakery, in inner city Melbourne will offer laminated pastries, grab-and-go- lunches, quiches, salads, and bakery-style sweet treats that John said to Broadsheet would have a “little more finesse than the morning stuff”.

John will also develop breads for the savoury items, and has ambitions of reviving classic staples such as the humble vanilla slice. However, he said, the hero would be the sunshine bun – malted savoury Danish dough that has been filled with custard.

“I’m drawing on a lot of things I’ve seen from my time [in Michelin-starred restaurants overseas] that are not so common here,” he told Broadsheet.

“I would like to bring that experience into the humble bakery scene and apply a range of techniques that are not so common in bakeries – really using ingredients the way I would approach it in a restaurant.

“Winning Dessert Masters has given me the confidence to give it a shot. I’m definitely nervous. It is stressful and exciting and all of the things. But I feel I’m never going to get a better opportunity to propel.”

Joining John at Butter Days Bakery will be his wife, sommelier Martina Cissig Demetrios (formerly from Embla and Trader House). The bakery is anticipated to open at the end of winter.

    Saw John on Master Chef Tues 3/6 & was so impressed with his chocolate metior.
    Can’t wait for his Malvern shop to open so as I can then try one or 2 or 3 !!
