Melbourne patisserie Le Yeahllow gone down in pop culture history after head pastry chef Steven He was brought on board for a MasterChef Australia challenge, unveiling the bakery’s famous Balloon Puppy Cake.

The pressure test challenge saw the four contestants try their hands at replicating the popular cake, under Chef He’s watchful eye as a guest judge.

The layered entremet is a sculptural piece designed to stand out, not shout. Inside, moist chocolate sponge is layered with black tea whipped ganache, tangy sour cherry compote and buttery shortbread with chocolate feuilletine. This is then toped with a miniature balloon dog decoration made from white chocolate.

Jimmy Wong, who previously competed on season 8 of the show, hung up his apron following the pressure test, with the judges commenting on flawed flavours.

“I’m gutted, but you know what? It’s been an absolute privilege to be part of this amazing experience,” he said.

“I wish all of you the best of luck and I will not be stopping.”

Speaking afterwards Jimmy joked the he had a little bit of PTSD from the experience.
