Apple & pear conserve

The recipes gathered here come from the wonderful cooks of The Country Women’s Association of Victoria Inc., some of whom would never have envisaged that their recipes would still be in such demand. The 185 tested and true recipes in this book have been shared countless times between friends and published as community cookbooks to raise funds for cash-strapped good causes. Food tastes may have changed and evolved, but these recipes stand the test of time.

Serving Size

Makes about 5 x 375 gram jars

WHAT YOU NEED

4 cups (880 g) sugar
3 cups peeled and chopped apples, cut into 1 cm dice
3 cups peeled and chopped pears, cut into 1 cm dice
juice of 1 large lemon
1½ cups (150 g) walnuts or hazelnuts, finely chopped

WHAT TO DO

Put all ingredients except nuts into a large pot.

Cook slowly over low heat about 20 minutes, until mixture gels.

Stir the nuts into the mixture.

Pour into warm sterilised jars and seal.

Conserve will keep for up to 2 years. Once opened, store in the fridge.

Variation

Peaches can be used instead of pears.
