Angelwood Pies will explore new pastry possibilities

Richard Overbye and Patrick Wallis are bringing something fresh to Leederville, Western Australia, with the opening of their new venture, Angelwood Pie Shop.

Aiming to elevate the humble pie, the bakery will explore bold, unique flavour combinations. Richard recently shared the news on his Instagram, expressing his excitement about the long-awaited opening.

“The worst kept secret is finally out! I present to you Angelwood Pie Shop, a project that Patrick Wallis and I have been lucky enough to partner up for and have been working hard on over the past few months,” he wrote.

“Angelwood is based on the vintage bakehouses you’ll find scattered around the countryside of Australia and New Zealand, it’s an ode to simpler times and will be focused on quality, locality, and simplicity.”

For much of his career, Richard has honed his craft in Michelin-star kitchens across the globe, where creativity can often be constrained by set menus. But with pies, he sees endless possibilities.

“Restaurants are confined to their four walls,” he explained to Broadsheet.

“With pies, I can travel, discover new recipes, and bring them into the business.”

This freedom allows the duo to experiment with fillings like Punjabi goat curry and Spanish seafood stew—innovative creations that break away from the classic.

Richard is excited to explore the question: What can’t be pie?

Expect to find inventive options like kangaroo, black bean, Japanese sweet potato curry, and even pumpkin lasagna. There will also be savory sausage rolls and playful twists on retro sweets, like fudge and key lime pie.

While Richard leads in the kitchen, Patrick, with his background as Operations Manager at Modus Coffee, brings the business acumen needed to bring Angelwood Pie Shop to life. Their shared vision began when they first met at a pop-up restaurant last year. It was their time together then, that made them realise they had the potential to create something special together.

“We’re both super excited to share this project with you,” Richard shared via Instagram.

“With an opening in Leederville in the not-so-distant future, we also look forward to sharing some pies with you soon too.”

The opening date for Angelwood Pie Shop is yet to be announced.
