A new bakery is set to open in Scarborough Beach, Queensland, promising handcrafted interiors, coastal charm, and a menu rich with artisanal breads, pastries and specialty coffee.
Landing Bakeryβa collaboration between hospitality operators Jack Wakefield and Tom Cooneyβis expected to open in early to mid-August.
Tom, co-owner of popular Brisbane cafΓ© Anytime Coffee and part of the team behind Riser Bread in Toowong, brings with him a reputation for high-quality sourdoughs and baked goods.
His decision to join the Scarborough project was driven by the chance to contribute something new and meaningful to an under-serviced area.
βI think it was very enticing for me to be part of something thatβs out in the suburbs and a bit more like on the frontier,β Tom told The Weekend Edition.
βIt was the same thing with Riserβbringing something to that side of town that it just didnβt really have. I know how hard Jack works on making something beautiful, delicious and a great place to beβI know that the two of us can put together something that is both exciting and a little bit innovative, but always welcoming.β
Jack, known locally for his cafΓ© Good Company, is returning to Scarborough after selling that business to new owners. With Landing, heβs launching what he calls a βbold new dispensary of pastries, breads and savouries.β
βI grew up out here and my whole life Iβve been thinking of things that Scarborough doesnβt have that I would have loved while growing up here,β Jack told The Weekend Edition.
βGood Company was the first step of that processβcreating a place to have good cooked-to-order breakfast and good coffee. Scarborough has always had a huge gap for a bakery and who better to come help me do a bakery than Tom Cooney himself.β
On the menu, customers can expect a lineup of sourdough loaves, focaccias, sandwiches, and a rotating pastry selection. While some items may draw inspiration from Riser Bread, the offering will be tailored to Scarborough.
βI wouldnβt say itβs a separate DNA entirely, because my taste and Jackβs overlap a lot,β Tom said.
βThere are things that we will do here that donβt happen at Riser or things that we might focus on a bit more, but I think thereβs going to be a bit of overlap in the offering.β
