A new bakery is set to open in Scarborough Beach, Queensland, promising handcrafted interiors, coastal charm, and a menu rich with artisanal breads, pastries and specialty coffee.

Landing Bakery—a collaboration between hospitality operators Jack Wakefield and Tom Cooney—is expected to open in early to mid-August.

Tom, co-owner of popular Brisbane café Anytime Coffee and part of the team behind Riser Bread in Toowong, brings with him a reputation for high-quality sourdoughs and baked goods.

His decision to join the Scarborough project was driven by the chance to contribute something new and meaningful to an under-serviced area.

“I think it was very enticing for me to be part of something that’s out in the suburbs and a bit more like on the frontier,” Tom told The Weekend Edition.

“It was the same thing with Riser—bringing something to that side of town that it just didn’t really have. I know how hard Jack works on making something beautiful, delicious and a great place to be—I know that the two of us can put together something that is both exciting and a little bit innovative, but always welcoming.”

Jack, known locally for his café Good Company, is returning to Scarborough after selling that business to new owners. With Landing, he’s launching what he calls a “bold new dispensary of pastries, breads and savouries.”

“I grew up out here and my whole life I’ve been thinking of things that Scarborough doesn’t have that I would have loved while growing up here,” Jack told The Weekend Edition.

“Good Company was the first step of that process—creating a place to have good cooked-to-order breakfast and good coffee. Scarborough has always had a huge gap for a bakery and who better to come help me do a bakery than Tom Cooney himself.”

On the menu, customers can expect a lineup of sourdough loaves, focaccias, sandwiches, and a rotating pastry selection. While some items may draw inspiration from Riser Bread, the offering will be tailored to Scarborough.

“I wouldn’t say it’s a separate DNA entirely, because my taste and Jack’s overlap a lot,” Tom said.

“There are things that we will do here that don’t happen at Riser or things that we might focus on a bit more, but I think there’s going to be a bit of overlap in the offering.”
