Melbourne’s boutique baking scene is expanding once again with the opening of a second Tori’s bakery.
Known for its Asian-inspired sweets and matcha-focused drinks, the original Tori’s has maintained a steady cult following since it launched in 2022.
The new location diverges from its predecessor in both design and offering. While the cozy mismatched furniture and larger footprint of the first store created a sense of vintage escape, this new spot is more compact and streamlined. The focus here shifts from baked goods to beverages, specifically matcha.
Manager Nahm Ratcha says the baking will now be done off-site, allowing the smaller store to house a dedicated matcha bar.
“I cannot stop serving strawberry matcha there, otherwise we’ll get complaints,” Nahm said to Broadsheet.
The menu of baked items also won’t mirror the Niagara Lane store.
“They’ll all be different,” Nahm said.
The approach reflects a broader trend in the local scene: niche offerings, small footprints, and highly focused product lines.
The opening marks a new phase for founder Tinee Su (of Humble Rays and Regale), whose style has long blended Japanese influence with a Melbourne sensibility.
It also lays the groundwork for the team’s upcoming project, Sugar Rays—an Asian-inspired ice cream shop set to open in the CBD later this year.
