Tiny Brisbane coffee van now selling cookie dough

A tiny Brisbane coffee van has recently launched a new product, now selling ready-to-bake cookie dough.

Lil Gypsy Van can be found nestled behind a picket fence in a Paddington cottage garden, right next door to Presents of Mind on the popular Given Terrace shopping strip.

The pretty-as-a-picture vintage caravan-turned-coffee cart first came to be during the 2018 Commonwealth Games. Originally set up as a pop-up servicing various events across Brisbane, Gold Coast and Sunshine Coast, the van eventually found its permanent home in Paddington, where it has become a daily pitstop for locals in need of a caffeine fix or a bite to eat.

On July 22, owner Rachel announced a new line for the business—Little Biccy—rolls of homemade cookie dough ready to take home and bake, based on the popularity of the cookies sold at Lil Gypsy Van.

“It’s been a long time in the making but we are finally ready to launch our cookie dough at the van!” a post on social media read.

“If you love our famous cookies then grab a roll and get baking. 4 easy steps to follow and you’ll have freshly home baked cookies in no time.”

The former mobile bar also serves homemade freshly baked goodies, including sourdough loaves, doughnuts and pastries, as well as delicious Moonshine coffee.

Lil Gypsy Van is open from 6am until 1pm on weekdays, 6.30am-12pm Saturdays, and 7am-12pm Sundays.
