Sydney patisserie Patisse turned up the heat for Valentines Day with two seductive desserts.
Inspired by Bon Joviβs 1992 hit Bed of Roses, executive pastry chef Vincent Gadan made a dessert in the shape of a βromantic loversβ bedβ. The dessert bed, which is meant to be shared, features a raspberry and rose mousse laid upon an almond milk daicquise and encased in an ornate bedhead made of delicate Varlhona chocolate and adorned with bold red rose petals.
Vincentβs second creation is the Mon Petit Choux, a heart-shaped dessert for two made of a croissant biscuit base filled with violet Chantilly Cream and decorated with cream patisserie filled with red choux pastry.
