After a successful year in Rozelle, in Sydney’s inner-west, Fabbrica Bread Shop is expanding its horizons to Coogee Beach.
The renowned bakery, part of the Love Tilly Group, is bringing its signature sourdough and pastries to Sydney’s eastern shores, where locals and beachgoers can now enjoy its offerings just steps from the sand.
At the helm of Fabbrica’s rise to fame are Head Baker Aniruddha Bhosekar and Sous Baker Alyce Bennett, whose expertise in crafting high-quality baked goods has made the original Rozelle location a hit. From sourdough to shakshuka Danishes, their creations have garnered a loyal following, and the new Coogee bakery promises to continue that tradition while introducing a few exciting twists.
In addition to the bakery’s classic treats, the Coogee location will feature exclusive offerings like the maritozzi—soft, golden brioche buns filled with sweet and savory options such as strawberries and Chantilly cream, vegan cherry, and curried egg with achari mayo.
A one-meter-long Roman pizza del Giorno will also make an appearance, alongside a DIY focaccia bar, inviting visitors to get hands-on with their bread-making skills.
According to Love Tilly Group co-owner Matthew Swieboda, the new bakery embodies everything a local spot should be, a place to pick up fresh pastries and coffee for a beachside treat, build your own sandwich, or grab a loaf of sourdough.
“We’re excited to have some new creations for Coogee and look forward to sharing them,” Matthew told Concrete Playground.
