Team Pastry Australia was pleased to get their newest team member – Richard Hawke – on board in January.
Richard works as a teacher at Ecole Nationale Supérieure de la Pâtisserie, south-west of Leon, France, and jumped at the opportunity to take part in The Pastry World cup.
Speaking both English and French, Richard helped the team translate recipes and organised local materials needed for the competition.
As a pastry chef, Richard has also helped the team with entremets; his specialty. “Entremets is what I love to make. I enjoythe fact you can have a cake that has all the textures, the lightness from the mousse, the creamy texture from the cremeux, crunchand soft sponges,” Richard said.
Richard continued his training for the Pastry Wold cup alongside his teaching and sayshe looks forward to passing on stories fromThe Pastry World cup.
“I’d like to help Team Pastry Australia with their future endeavours. Now that I have done one campaign I have more contacts and know how the organisation works, so hopefully I can do the same thing in 2015,” Richard said.
