With fresh halved strawberries and elderflower sprigs to decorate, this subtle and delicate buttercream also goes beautifully with lychee cake.
WHAT YOU NEED
17Sg unsalted butter, softened
270g icing (confectioners’) sugar, sifted
120g cream cheese, softened
1 tablespoon milk
1 teaspoon vanilla bean paste or natural vanilla extract
2 tablespoons elderflower cordial. Note: Elderflower cordials vary in sweetness, so add it to taste. If it’s a little runny, just add extra icing sugar as needed.
WHAT TO DO
Beat all the ingredients together for 3-5 minutes or until light and fluffy.
