Chantilly Cream, Raspberry Androse Buttercream
With fresh raspberries and a scattering of pink and/or red rose petals, this is a traditional filling a lot of people find hard to go past, especially when accompanied with strawberries. use it in a Victoria sponge, or a chocolate cake, with fresh strawberries, in a meringue stack with fresh figs or layered crepe stack with watermelon and rose jam berries.
WHAT YOU NEED
500ml thickened (whipping) cream
2 tablespoons icing (confectioners’) sugar, sifted
1 teaspoon vanilla bean paste or natural vanilla extract
WHAT TO DO
Beat the Chantilly cream, sugar and vanilla on high speed until soft peaks form.
