Consumers Want More Say

Research of almost 11,000 participants worldwide has provided global and local insight into emerging consumers trends in the baked good sector, showing consumers in bakery, patisserie and chocolate industries have become more articulate and want more say in the products they purchase.

The Taste Tomorrow research suggests consumers are now seeking greater control of baked goods across three key criteria: freshness, health and taste. In the Asia-Pacific, 75 per cent of consumers surveyed said they would appreciate a bakery where the oven is in sight and where bakery items are freshly baked on the spot.

Around two-thirds of Australian consumers also said they would buy more baked products at bakeries where everything is baked with natural ingredients, while almost a third feared food would become less natural in the future.

Taste Tomorrow is Puratos’ platform for consumer insights, conducted every three years to expose changing consumer behaviours and attitudes towards bread, pastry and chocolate.
