For centuries the Japanese have considered buckwheat as one of their most important foods. In the mountains of Japan, where meat and fish are scarce, the diet was basically vegan and buckwheat was one of the most important sources of lysine.

Buckwheat Enterprises had been exporting buckwheat to Japan for more than 30 years when the Japanese tsunami hit in March 2011, severely affecting their sales. Due to initial cross-contamination issues, Buckwheat Enterprises has opened a gluten-free 100 per cent buckwheat processing facility as the company also processes spelt, which is not gluten-free.
