Autolyse Closes Its Doors In Sydney

Artisan sourdough specialist, Autolyse, has been forced to restructure, shutting the doors to its Sydney store just eight months after expanding into New South Wales.

The bakery-café business, which has its roots in Canberra, opened a large designer store in Chippendale last July, but didn’t get the traffic it was expecting.

The store in Braddon, Canberra, remains open and is operating successfully, with owner Mick Gubas working with the administrators to resolve financial issues. He said customers have been very supportive.
