Tokyo Lamington X Circa collab to ease lockdown blues

It would be fair to say that Sydney-siders are having a pretty rough trot at the moment, but this Tokyo Lamington X Circa Espresso collab is here to help ease the lockdown blues, even if it’s only for a moment.

The collaboration resulted in a special limited-edition lamington flavour based on Circa’s signature Persian Love Cake.

The ‘Love Cake Lamington’ features vanilla rose cream, vanilla sponge, rose white chocolate dip finished in coconut, rose petals, almond and pistachio, and will be available for two days only—Saturday, August 28 and Sunday, August 29 at Circa Espresso in Parramatta.

Circa Espresso wrote on Instagram: “We are so excited to bring some joy and spark back into the hospitality industry and our local community. Stock will be limited so be sure to join us from 8am on Saturday. We look forward to seeing you Parramatta.”

Tokyo Lamington, purveyors of the traditional Aussie cake with a modern twist, are big fans of collaboration, previously teaming up with Melbourne Bush Foods for a native ingredient-focussed range, Koko Black, as well as other big industry names like Mitch Westwood and Ashley Smith.

Born in 2019, Tokyo Lamington takes the humble Australian icon and turns it on its head; marrying the well-loved dessert with modern Japanese colour and spirit.

Founded by Min Chai (Founder of N2 Gelato) and Eddie Stewart (Previously Black Star Pastry  Alumni and founder of N2 Brunch Club), these untraditional Lamingtons were originally only found in Singapore and Tokyo before launching its flagship Australian store in Sydney in 2020.
