Roll out the perfect pastry with Anchor Butter Sheets

Anchor Butter Sheets are conveniently sized lamination butter sheets, expertly designed to be flexible and easy to work with. They’re made from specialty pastry butter containing 83 per cent milk fat, with no chemical processing or additives.

Anchor Butter Sheets have been developed to consistently give better and easier lamination – delivering that highly desirable honeycomb texture and rich, authentic butter flavour every time.

“With a melting point of 37ºC, Butter Sheets are ideal for use in warm bakery environments and wherever faster proofing is required,” Alastair McCausland from Fonterra’s Foodservice Team points out.

“The sheets won’t soften too fast, or oil out at higher proofing temperatures – thereby providing you with maximum flexibility and helping to boost productivity.”

Anchor Butter Sheets can be stored frozen in the carton, then thawed in the refrigerator as required (refrigerated shelf life is at least eight weeks). Simply remove from the fridge when needed and temper to 8-10ºC depending on production environment. Once pliable, the sheets are ready to use and can be bent 45°C without breaking or tearing.
