Popular Brisbane-based Rise Bakery has opened the doors to a new store, located in the former Mica space.

Rise Bakery owners Harry Ohayon and Maxime Bournazel said they had been customers of Mica before they launched their own business in 2022.

“If we wanted good pastries, this is where we’d come,” Harry told Good Food.

“When Shannon [Kellam, Mica owner] went into voluntary liquidation it was a bit of a shock for the industry. LSH [Property Australia] the landlord here, wanted a continuity of what Shannon was doing, so we came up and said, ‘look we’d be happy to take over and continue what he started’.

“[Like Shannon] the vision has always been to showcase French baking and French gastronomy, so it was a natural continuation and made sense for Rise to take over.”

Located in the Breakfast Creek Lifestyle Centre, the new Rise Bakery overlooks Breakfast Creek, and some major external design has helped transform the retail space from Mica to Rise. Some new pendant lights and a cocktail bar have also been installed in preparation for stage two of the takeover, which will see the restaurant side of the business begin. It’s anticipated this will take place in March or April.

Harry said he has lived in Brisbane for 12 years and said in that time he’s seen the city’s bakery scene almost transform.

“That bakery trend has passed now and it’s almost become more of a cultural thing,” he said.

“That’s great to see… everything has come so far. It’s nice to contribute to that a little bit.”

The announcement last year that Shannon Kellam’s multiple Brisbane eateries went into voluntary administration was met with shock from the industry.

BCN Events Group, which operated seven venues that specialised in bakery goods was closed in May 2024. Included in that number were the popular King Street Bakery, wholesale service provider The Kneadery, and Lumiere Culinary Studio as well as Mica.
