Lune’s newest Melbourne store, dubbed “Maxi Lune” is set to officially open its doors in Lonsdale on January 31.
Although the newest store located under the Ritz-Carlton has a similar footprint to Lune’s flagship store at Fitzroy, it’s anticipated it will have the capacity to easily double pastry production – hitting up to 6000 per day.
Speaking with The Age, Lune fonder Kate Reid said they had maxed out the Fitzroy kitchen.
“We have to say no to [popping up at the Australian Open] every year because we just don’t have the capacity,” she said.
“[Lonsdale] allows us to get more croissants to more people.”
One prominent aspect in increasing production output, Kate said, was the new Lonsdale store has double the cold storage for raw pastry – the thing that actually determines output capacity – as well as 50 per cent more kitchen space.
While focus is initially on perfecting daytime production, Kate said she has ambitions to eventually keep the store open after dark.
“I think Melbourne CBD is ready for a space like this,” she said.
“Imagine people sitting here at 8.30pm at night on a Friday, having pastry.”
The Lonsdale store joins the three other Lune bakeries across Melbourne, and will produce all the firm favourites including the almond and traditional croissants as well as monthly specials and Lune Lonsdale exclusives. The first exclusive item has already been announced as a collaboration with Melbourne chip brand Chappy’s, and will feature a salty-sweet twice-baked croissant filled with choc chip frangipane that’s served with a packet of chips that consumers are encouraged to put inside the pastry.
Despite the new product range, Kate said Lune Lonsdale’s focus will remain firmly on traditional favourites.
“While people think we focus a lot on just creating new products, we spend a lot of time trying to push the quality of our classics,” she said.
“At the heart, it’s the classics people want… and I just want to be a benchmark for that.”
