New South Wales’ iconic Gumnut Patisserie is getting ready to turn 30, with the month of October set to become a month-long celebration.
Owners Tracy and Vicki Nickl said they were excited to mark the milestone.
“We can hardly believe it,” Vicki said.
“But we’re celebrating the only way we know how – with treats, fun and a whole lot of love from our amazing community. The whole month of October is shaping up to be one big party.”
Vicki said some of the celebrations are already underway, with Gumnut treats being given away on the 30th of every month leading up to October. Then, from September 23-October 22 golden tickets will be hidden in selected products with the winners receiving Gumnut Dollars to spend instore.
The #HowFarCanGumnutGo initiative is also being run on social media, with the patisserie’s fans being urged to snap photos of a Gumnut box in front of a landmark or beautiful backdrop and then share them with the hashtag. The winner will get to help create and name a new Gumnut product.

Vicki said it was exciting to look back on how far the business has grown in the past three decades.
“What started out as a little patisserie with the main idea of Tracy and I being able to work together and raise a family has turned into something so much more,” she said.
“We had no idea that 30 years down the track that dream would grow into three stores, a team of over 80 incredible people and a community we’re so proud to be part of. Back then we were just two young kids who thought working side by side every day would be awesome.”
Vicki said the early days of Gumnut Patisserie saw the duo working with just a handful of staff in a 157sq m kitchen that had been filled with second-hand equipment scraped together from auctions.
“We’ve come a long way—from used equipment to now operating with some of the most advanced machinery and cutting-edge technology in the world. It’s a testament to our team’s dedication, our loyal customers, and the belief that hard work and heart can take you far,” Vicki said.
“One of the greatest joys for us has been having all four of our children growing up and work in the business. Josh has become a pastry chef, and William is well on his way. Lachlan and Melanie are following their own paths now, but they still come back on the big days to lend a hand — and we wouldn’t have it any other way.
“Our kitchen and shop teams are like family too. We call our apprentices our ‘big kids’, and the wider crew is lovingly known as the Gumnut family. Because at the end of the day, that’s what we are… a family, making beautiful food together for the community we love.”
